Would you like some protein with your pancakes?

It is finally (finally!  finally!!) going to break seventy degrees today.  This is a momentous occasion for several reasons.  First, the winter slump I have found myself in since January, which was probably exacerbated by the post wedding blues, is finally coming to an end.  Secondly, it means bikini season is just around the corner.  Cue the panic. 

As I become older, I feel I get a better sense of who I am and what I need with every passing year.  I have finally come to grips with the fact that I am not a person who will go to the gym and really push myself on my own.  Instead, if left to my own devices, I will plod along and finish a respectable 5k but add absolutely nothing to my overall fitness or weight loss goals (an added bonus of winter/wedding blues is the 10 lbs that have attached to my midsection). 

http://profile.ak.fbcdn.net/hprofile-ak-ash3/s160x160/602832_586966037985579_1460569705_a.jpgLuckily, I have an amazing bootcamp, Tribe Fitness,  in my area that I started going to 5 days a week in February.  Today marked the beginning of our transformation challenge which ends on June 17, perfectly timed for our trip to Key West on June 19th.  The person who loses the biggest percentage of the body weight wins an iPad.  Summer skinniness AND an iPad?!  If ever there was an opportunity to get this weight off, it is now.  So in case anyone else was feeling the impending summer pressure, I wanted to pass along a great recipe for Protein Pancakes I got from the amazing team at Tribe Fitness.  Since a simple passing glance at pasta appears to pack on the pounds for me, this was right up my alley.  I even had a chance to sample them on Saturday and rest assured they are delicious.  Who says eating healthy needs to be tasteless!

Protein Pancakes

  • 1/2 cup old fashioned oatmeal
  • 1/2 cup almond flour
  • 1 cup cottage cheese (reduced fat)
  • 8 egg whites or 4 whole eggs
  • 1/4 tsp cinnamon
Blend & cook 1-3 more minutes per side than standard pancakes
